People argue about alkaline diets online as if pH is a belief system. It's not. The blood maintains a pH between 7.35 and 7.45 — that's basic physiology, not opinion. What is worth discussing is what the body has to spend to maintain that range when the food you eat keeps pushing it acidic. My father didn't invent alkalinity. He observed that when the body stops fighting to maintain its own pH, it has resources left over to do everything else.

Why pH matters for your cells

Every metabolic process — from oxygen transport to enzyme function to mineral absorption — works within a narrow pH window. When the body is flooded with acid-forming foods (meat, dairy, refined sugar, alcohol, processed grains), it pulls alkaline minerals from bones, teeth, and tissues to neutralize the acid. This isn't a theory; it's buffering chemistry.

The issue isn't one acidic meal. It's decades of acidic eating that slowly depletes the body's mineral reserves. My father called this the mineral debt — and he said the interest compounds.

The comparison chart

This chart sorts common foods by their effect on the body after digestion — not their raw pH. A lemon is acidic on your tongue but alkaline in the body. That distinction matters.

Notice: sea plants have no acidic column. Every sea plant my father worked with is alkaline. That's why he called them the foundation — they never work against you.

The "in-between" foods

Not everything is clearly alkaline or clearly acidic. Some foods sit in a gray zone — mildly acid-forming, or alkaline only in certain preparations. These are the ones that trip people up.

Tomatoes — alkaline when raw and ripe; acidic when cooked or canned. Use sparingly, raw, and always plum or cherry varieties (not hybrid beefsteak).

Avocados — alkaline and nutrient-dense, but Dr. Sebi cautioned against overconsumption because of their high fat content. One half per day is a reasonable amount.

Mushrooms — technically not a plant (they're fungi). My father did not include most mushrooms in his protocol. If you use them, stick to non-hybrid varieties: shiitake, chanterelle, oyster.

Potatoes — starchy and acid-forming. This includes sweet potatoes. Replace with squash (butternut, chayote) for a similar texture with an alkaline profile.

Beans — most beans are mildly alkaline but also starch-heavy. Chickpeas and lentils are acceptable in moderation during the transition period. Long-term, the protocol replaces them with ancient grains and sea plants for mineral density.

Five swaps you can make this week

Start with the easiest wins. Each swap removes one major acid-forming food and replaces it with something your body actually recognizes.

White rice

The grocery strategy

Knowing the chart is step one. Shopping from it is step two. Here's how to make it practical:

Shop the perimeter. Produce, bulk grains, fresh herbs. The center aisles are where the acid-forming processed foods live. Most of your cart should come from the edges of the store.

Buy in bulk. Quinoa, wild rice, amaranth, hemp seeds, and dried herbs are all cheaper per serving when bought in bulk. A 5-pound bag of quinoa lasts a household of two about six weeks.
